Sautéed Summer Vegetables

These sautéed summer vegetables are a simple Ayurvedic vegetable recipe designed to support digestion while honoring the abundance of seasonal produce.

Cooking vegetables with gentle digestive spices helps make them easier to digest while enhancing flavor and nourishment.

In Ayurveda, lightly cooked vegetables are often preferred over raw foods because they support agni, the digestive fire.

This dish is an easy way to incorporate more seasonal vegetables into your meals while keeping the digestive system balanced and supported.

Dosha Adjustments

Adjustments for Vata

Vata types can enjoy these sautéed vegetables warm with a generous spoon of ghee, extra cumin, and a pinch of rock salt. Adding sweet root vegetables like extra carrots alongside warm healthy fats provides grounding, hydrating comfort for delicate digestion.

Adjustments for Pitta

These summer vegetables are naturally pacifying for Pitta due to their sweet, mild, and nourishing qualities. Using sweet summer produce like zucchini, asparagus, sweet potatoes, and green beans cooked gently in ghee keeps internal heat completely calm and balanced.

Adjustments for Kapha

Kapha types can lighten this dish by using warm sesame oil instead of ghee, reducing sweet potato, and adding extra turmeric and black pepper. Stirring in bitter greens like arugula right at the end helps clear sluggishness and lightens the meal.
