Dry Chickpea Curry

This dry chickpea curry is a warming Ayurvedic chickpea recipe designed to support digestion while providing steady nourishment. 


Chickpeas are rich in plant-based protein and fiber, and when cooked with digestive spices such as cumin, coriander, and turmeric, they become easier to digest and more satisfying. 


In Ayurvedic cooking, spices are used not only for flavor but also to strengthen agni (digestive fire) and improve nutrient absorption. 


This comforting curry is a simple and nourishing way to enjoy chickpeas while supporting balanced digestion and sustained energy.

Ingredients

Preparation

  1. Prepare Chickpeas: If using dried chickpeas, soak them overnight, then cook until soft. Drain and set aside. If using a can of chickpeas, drain and set aside.

  2. Heat Spices: Heat ghee in a pan, add cumin seeds, and let them sizzle.

  3. Sauté Aromatics: Add chopped ginger and green chili (optional). Sauté for a minute.

  4. Add Spices: Stir in turmeric, coriander, garam masala, and salt. Cook for 30 seconds.

  5. Mix Chickpeas: Add the cooked chickpeas and stir well to coat with spices. Cook for 5-7 minutes, stirring occasionally.

  6. Finish: Add a squeeze of lemon juice, mix well, and turn off the heat.

  7. Garnish: Sprinkle with chopped cilantro and grated coconut.


Enjoy with flatbread (chapati) or rice.

Dosha Adjustments

Adjustments for Vata

Vata types can enjoy this dry curry by adding extra ghee, a generous pinch of sea salt, and hing, and serving it alongside soft basmati rice. The extra healthy fat, hing, and salt soften the legume's dry nature.

Adjustments for Pitta

Pitta types should keep the heating spices subtle by using cooling coconut oil instead of ghee and garnishing generously with fresh cilantro. Excluding chili pepper allows the sweet legumes to nourish without overheating.

Adjustments for Kapha

This dish offers excellent nourishment for Kapha types due to its dry, light, and warm nature. Cooking black chickpeas with cumin, coriander, and turmeric kindles digestion and supports active metabolism.
