Prep Time:

Serves:

15 minutes (including cooling and blending)

Approximately 1/2 cup of spice blend

Ingredients

Preparation

  1. Warm the Whole Seeds Gently: Place the cumin seeds, coriander seeds, fennel seeds, and ajwain seeds in a small, dry skillet over medium-low heat. Dry-roast them gently for 3 to 5 minutes, stirring frequently, until they release a rich, nutty aroma.

  1. Incorporate Ground Spices: Remove the skillet from the heat immediately. Stir in the dry ginger powder and ground cinnamon, letting the pan's residual heat awaken their warming qualities without scorching.

  1. Cool Completely: Pour the warm mixture onto a plate and let it cool completely to room temperature.

  1. Grind into a Fine Powder: Transfer the cooled seed mixture to a clean spice grinder, new coffee grinder, or mortar and pestle. Grind into a fine, fragrant powder, then mix thoroughly with the powdered ginger and cinnamon if not already blended.

  1. Store: Funnel the finished masala into an airtight glass jar and store it in a cool, dark place out of direct sunlight, using it up within a few weeks for optimal potency.

Dosha Adjustments

Adjustments for Vata

Vata types can enjoy this grounding blend daily during cooler seasons or times of stress, using it directly in meals to warm the digestion and prevent chill.

Adjustments for Pitta

Pitta types should use this warming blend sparingly or reserve it for cooler months, as the heating qualities of ginger and ajwain may provoke excess internal heat.

Adjustments for Kapha

Kapha types benefit wonderfully from the warming, stimulating spices in this blend, which help clear sluggish digestion and reduce heavy moisture.
