Rose Saffron Rice Pudding: Cooling Ayurvedic Kheer Recipe

This traditional Ayurvedic Rose Saffron Rice Pudding (Kheer) combines fragrant basmati rice simmered in rich milk with aromatic rose water, golden saffron, and crushed cardamom. 


Designed to soothe Pitta dosha and support our tissues, this comforting dessert offers a gentle, sweet finish to any meal.

Preparation

  1. Rinse the basmati rice thoroughly until the water runs mostly clear.

  2. In a medium saucepan, combine the rice and milk.

  3. Bring to a gentle simmer over medium heat, then reduce the heat to low.

  4. Cook uncovered for 30–40 minutes, stirring occasionally, until the rice is very soft and the mixture becomes creamy.

  5. Stir in the saffron threads, sweetener, and cardamom for the last minute of cooking.

  6. Remove from heat and allow the pudding to cool for about 5 minutes.

  7. Stir in the rose water.

  8. Serve warm or at room temperature. Garnish with sunflower seeds and dried rose petals if desired.

Dosha Adjustments

Adjustments for Vata

Vata types can enjoy this rich rice pudding warm with extra ghee, cardamom, and soaked raisins. Sweet basmati rice cooked thoroughly in whole milk offers building, comforting nourishment that grounds an airy nervous system.

Adjustments for Pitta

This traditional kheer is exceptional for pacifying Pitta heat due to the cooling rose water, sweet saffron, cardamom, and whole milk. Served room temperature, it soothes digestive acidity and satisfies a strong appetite.

Adjustments for Kapha

Kapha types should enjoy this rich dessert in moderation, preparing it with unsweetened oat milk or diluted whole milk. Omitting heavy sweeteners and adding extra cardamom (and even black pepper or ginger) keeps the pudding light and manageable for agni.
