
Carrot Ginger Soup
This carrot ginger soup is a warming Ayurvedic soup recipe that supports digestion while offering comforting nourishment.
Sweet carrots provide grounding sweetness, while ginger gently stimulates agni and helps the digestive system process food more efficiently.
Soups like this are commonly recommended in Ayurveda because they are both nourishing and easy to digest.
This vibrant soup works beautifully as a light meal or starter and is especially supportive during cooler seasons when the body benefits from warm, soothing foods.

Ingredients
1 Tbsp ghee (or olive oil) or make your own
1/4 teaspoon ground black pepper
1 teaspoon cumin seeds
1 teaspoon coriander seeds (crushed)
1 inch fresh ginger, chopped
1/2 teaspoon powdered turmeric
4 large carrots, sliced
1/2 teaspoon salt
water
1/4 cup chopped cilantro
juice from 1/2 lime
Preparation
Heat 1-2 cups of water in a small saucepan (It's always best to use hot water when adding to food that is already cooking).
In a separate saucepan, heat ghee on medium/low heat.
When hot, add black pepper, cumin seeds and coriander seeds, cooking until golden.
Add fresh ginger, saute until golden.
Add carrots, turmeric powder and salt, saute until soft, being careful to not burn the turmeric powder.
Add enough hot water to cover carrots, turn up the heat and bring to a boil.
Lower heat and cook for 15-20 minutes, making sure water does not evaporate.
Remove from heat.
Add juice from 1/2 a lime and cilantro just before serving.
*Optional to blend in blender or food processor to make a puree, just be very careful blending hot soup.
Dosha Adjustments
Adjustments for Vata
Vata types can make this warm soup deeply grounding by blending in an extra spoonful of ghee, a splash of coconut milk, and a pinch of sea salt. Softly pureed carrots and ginger soothe cold, erratic digestive energy.
Adjustments for Pitta
Pitta types can balance this vibrant soup by reducing the fresh grated ginger portion and cooking with coriander and cumin. Serving it warm with a fresh cilantro garnish or cilatro sauce satisfies agni while preventing excess internal heat.
Adjustments for Kapha
This soup is naturally balancing for Kapha types due to its warm, gently spiced nature. Cooking sweet carrots with fresh ginger, black pepper, and turmeric kindles a sluggish digestive fire and lightens seasonal heaviness.
