Roasted Vegetables
These roasted vegetables are a simple Ayurvedic vegetable recipe that highlights the nourishing qualities of seasonal root vegetables.
Roasting vegetables such as squash, sweet potatoes, carrots, and onions enhances their natural sweetness while creating a deeply satisfying dish.
In Ayurveda, warm cooked vegetables are easier to digest than raw foods and help support agni (digestive fire), especially during cooler seasons.
This comforting recipe is an easy way to create a balanced Ayurvedic meal that feels grounding, nourishing, and full of seasonal flavor.

Dosha Adjustments
Adjustments for Vata
Vata types can enjoy these roasted vegetables warm, with a generous drizzle of olive oil or ghee, warm cumin, and a pinch of sea salt. Pairing with coconut chutney or fresh cilantro sauce will counteract any dryness.
Adjustments for Pitta
Pitta types can enjoy this hearty roast by favoring sweet squashes, carrots, and sweet potatoes while keeping garlic and heavy black pepper minimal. Seasoning with sweet herbs like rosemary cools internal heat without sacrificing flavor.
Adjustments for Kapha
Kapha types can enjoy roasted vegetables by baking with minimal oil and seasoning generously with black pepper, dry ginger, and turmeric. Choosing lighter vegetables alongside root veggies keeps the dish crisp and easily digestible.
