Ingredients
2 teaspoons ghee (or make your own ghee) or coconut oil
1 teaspoon coriander powder
½ teaspoon fennel seeds
⅛ teaspoon turmeric
1 small zucchini, sliced into half-moons
1 cup green beans, trimmed and cut into bite-sized pieces
½ cup green peas (fresh or frozen)
¾ cup full-fat coconut milk
¼ cup water
½ teaspoon pink salt, or to taste
1½ teaspoons lime juice
1 tablespoon chopped cilantro
Optional garnish:
Toasted sunflower seeds
Fresh cilantro leaves

Preparation
Heat the ghee or coconut oil in a large skillet or saucepan over medium-low heat.
Add the fennel seeds and cook for about 30 seconds, until fragrant.
Stir in the coriander and turmeric.
Add the zucchini and green beans and sauté for 3–4 minutes.
Pour in the coconut milk and water.
Add the salt and bring to a gentle simmer.
Cover partially and cook for 10–15 minutes, or until the vegetables are tender but still vibrant.
Stir in the peas and cook for an additional 2–3 minutes.
Remove from heat and stir in the lime juice and cilantro.
Serve warm over basmati rice, Fennel Rice with Green Peas, or quinoa. Top with Fresh Cilantro Sauce.
