Summer Vegetable Coconut Curry: Cooling Ayurvedic Recipe
Warm summer weather requires meals that satisfy hunger without generating excess internal heat.
This Summer Vegetable Coconut Curry combines sweet summer squash, crisp green beans, and sweet corn simmered in a creamy coconut milk base.
Gently spiced with coriander, turmeric, and cumin, this soothing dish calms Pitta dosha, protects the digestive fire, and provides grounding nourishment for the system.
Prep Time:
Serves:
40-50 minutes
2 Servings
Ingredients
2 teaspoons ghee (or make your own ghee) or coconut oil
1 teaspoon coriander powder
½ teaspoon fennel seeds
⅛ teaspoon turmeric
1 small zucchini, sliced into half-moons
1 cup green beans, trimmed and cut into bite-sized pieces
½ cup green peas (fresh or frozen)
¾ cup full-fat coconut milk
¼ cup water
½ teaspoon pink salt, or to taste
1½ teaspoons lime juice
1 tablespoon chopped cilantro
Optional garnish:
Toasted sunflower seeds
Fresh cilantro leaves
Lime wedges
Preparation
Heat the ghee or coconut oil in a large skillet or saucepan over medium-low heat.
Add the fennel seeds and cook for about 30 seconds, until fragrant.
Stir in the coriander and turmeric.
Add the zucchini and green beans and sauté for 3–4 minutes.
Pour in the coconut milk and water.
Add the salt and bring to a gentle simmer.
Cover partially and cook for 10–15 minutes, or until the vegetables are tender but still vibrant.
Stir in the peas and cook for an additional 2–3 minutes.
Remove from heat and stir in the lime juice and cilantro.
Serve warm over basmati rice, Fennel Rice with Green Peas, or quinoa. Top with Fresh Cilantro Sauce.
Dosha Adjustments
Adjustments for Vata
Vata types can make this summer curry more grounding by cooking sweet root vegetables and zucchini in full-fat coconut milk with warm cumin and ghee. The rich, sweet coconut base soothes dry digestive tissues and settles airiness.
Adjustments for Pitta
This coconut curry is exceptionally balancing for Pitta due to the cooling coconut milk, tender green beans, and sweet summer squash. Omitting chili peppers allows the soothing, astringent vegetables to cool internal heat and satisfy hunger.
Adjustments for Kapha
Kapha types can lighten this curry by using diluted coconut milk or broth, increasing green beans and zucchini, and seasoning generously with turmeric, black pepper, chili, and mustard seeds to kindle sluggish agni.
